A shout out to my friend Beth who helped with this one. She being from Louisiana and knows something about fried dough. These are not your old fashion fritter like my Dad made that were at least three pounds each these are light and airy. My wife who is not a big fried food fan gave me a thumbs up on this one. In Northern Virginia we are blessed to have a big supply of blue crab. As many of you have seen I have a lot of recipes with crab.
1 cup AP flour
1 teaspoon baking powder
1 jalapeño pepper diced fine
8 oz blue crab from Crosby Crab Co Bristow Va http://www.crosbycrabco,com
1 can 5.5 canned corn drained
3/4 teaspoon old bay
1/2 teaspoon black pepper
1/4 teaspoon baby mustard leaves from Pennington Market Farm wwwpenningtonmarketfarm.com
1 eggs plus 1 egg white
1/2 cup whole milk
1 white onion diced fine
1 tablespoon butter
Cooking oil for frying enough for 1/4 inch
Mix flour, baking powder, old bay, pepper.
Sauté onion and jalapeño on medium low in butter
Separate egg yokes and whites
Whip egg whites
Beat egg yokes with milk
In large bowl mix flour mixture with egg/milk mixture
Add onion/pepper mixture
Fold in egg whites
Fold in crab
Fold in corn
Heat oil to 350
Drop batter in tablespoon in pan
Cook for until golden brown in each side 2 to 4 inutes
Remove to paper towel to drain
Sprinkle with old bay while hot
