3 meals 12 ingredients for one hungry college kid

I had a friend who doesn’t like to cook and was bored with her food.  Her daughter had just gone off to college and didn’t cook.  So I came up with these recipes for her and then found out she doesn’t like ham.  Oh well, I hope you like them.

1.5 pound ham steak that’s the star protein

1 can pineapple chunks
1 bag mixed vegetables
1 dozen eggs
1 box instant rice
1 bottle teriyaki
1 bag bean sprouts
2 green onions
Sugar
Corn starch
Cooking oil
Cut ham steak in three equal parts
Day 1: ham, pineapple, and peppers over rice.
Cook rice according to package directions (Make twice as much rice as you’ll eat today; you will use the rest tomorrow.)
Cut green pepper into one inch pieces
Heat 10” skillet on medium
Add ham steak, brown on each side
Add green pepper cut in 1 inch pieces
Cook for 5 minutes
Add pineapple including juice
Bring to boil
In a separate bowl, Mix 1 Tablespoon corn starch and 1 tablespoon water and add to pan
Cook until thick
Serve over half the rice
Day 2: Fried Rice
Cut ham into 1/2 inch cubes
Chop one gree onion
Heat 10’ pan heat to medium for a few minutes, then add oil
Add chopped ham
Add mixed vegetables and stir
Add chopped green onion
Add 1/4 package of bean sprouts
Add yesterday’s rice and cook for 5 minutes
Add 2 tablespoons teriyaki
Make a well in middle
Scramble an egg in a separate bowl
Add 1 scrambled egg cook to the well
When egg is cooked, cut it up and mix it in the rice
Enjoy!
Day 3: egg foo young
Finely dice 1/2 green pepper
Mix together:
bean sprouts
1/2 cup diced ham
1/2 cup green onions
mixed vegetables
2 tablespoon teriyaki
4 eggs
Add green pepper
Heat  8” pan to medium
Add one tablespoon of oil
Add 1 cup of mixture
Cook until set (about 5 minutes)
Flip and cook until no moisture seeps out
Sauce
Mix 3 tablespoons teriyaki
1/3 cup water
2 teaspoon sugar
1 teaspoon water mixed with cornstarch
Bring to boil until thick
Serve with rice
Bonus meal
scrambled eggs, ham, green onions, green pepper
