This is a simple one start to finish 30 minutes. I love walleye and when it came in the day before it’s even better.(This is my lucky month I’ve been able to get it twice this month in Virginia that is pretty cool) You get the mild onion flavor of the leeks, the crunch of the potato chips and leeks, and the sweet flavor of the walleye. Hope you enjoy it.
1 pound walleye fillets skin removed (I got mine at Crosby’s Crabs in Bristow VA
1 leek cut in 1/4 inch rounds
1/4 cup flour
1 small bag bbq potato chips
1/4 parmigiana cheese grated
4 oz butter melted
Preheat oven to 350
On a lined baking sheet
In a bowl crush potato chips
Add parmigiana and mix
Place walleye fillets on lined sheet tray
In second bowl rinse leeks 3 times
Coat with flour spray with cooling spray
Put in oven bake for 15 minutes turning once
Add butter to fish
Add potato chip mixture to fish
Bake for 18-20 minutes adding the crispy leeks the last 5 minutes
Serve with a lemon wedge and tartar sauce
