Well we know that my love of pork products knows no bounds. The key is to use the best part, bacon in as many ways as humanly possible. Baked goods came to mind. Bacon bread no. Bacon lettuce and tomato bread, sometimes I crack myself up. What is bacon’s best friend? Maple! So how to go about pairing the two. A maple cupcake with bacon frosting; sweet salty with little bacon chips in the frosting. I hope you like it.
Dry Ingredients:
2 1/2 cup AP flour sifted
1 1/2 teaspoon baking powder
1/2 teaspoon salt
Wet ingredients
1 cup butter (2 sticks)
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon maple extract
1/4 cup maple syrup
2 eggs beaten
1/4 cup mayonnaise
1 cup milk
In bowl one, mix flour, baking powder, and salt
In bowl 2, cream together softened butter, brown sugar and sugar
Add one egg at a time and beat for 30 seconds after each one
Add mayo mix
Add maple syrup mix
Add milk mix
Add maple extract mix
Add flour in 3 portion scrap down the bowl after each time mix until all is combined
Preheat oven to 350
Place cupcake liners in cupcake pans
Bake for 22-25 minutes or until a toothpick comes out clean
Bacon frosting
1 1/2 sticks room temperature butter
8 strips bacon cooked drained saving fat
1 teaspoon maple extract
1/4 teaspoon salt
4 cups powdered sugar
Cook bacon save fat set aside
In mixer place butter and bacon fat mix for 2 minutes
Crumble bacon making bits I would use a food processor
Add maple extract whip
Add sal and whip
Add powdered sugar 1 cup at a time
If icing is too thick add a teaspoon of milk
If icing is too thin add more powdered sugar
Mix in bacon bits stir
Top cupcakes with frosting
