Kentucky Hot Brown

This dish  is classic Louisville,  In my mid-spent youth I would go to the Derby with my brother Mike.  Mike found out that I came in handy because I was good at picking horses.  If we won( which we would) we would go out to dinner and I found two dishes that I liked this is one is one of those two.  The classic is an open faced sandwich which means sit down with a knife and fork.  That’s no good for football food.  So I worked on making portable and the flavor have multiple notes.  It’s not the classic way this dish is done but what in out history makes you think I’m capable of that.  Thanks for the help Jack the official taste tester.

2 pounds Turkey breast breast roasting instruction below or if you want to make it great use smoked turkey breast  If you want to cheat get the Costco pre-cooked turkey breast

16 slices Thick cut bacon From Rainbow Acres Farm Bristow VA http://www.rainbowacresfarm,con
2 large fresh tomatoes
8 slices Thick cut sour dough bread
4 tablespoon butter
4 tablespoons flour
2 cup whole milk
1/2 cup white cheddar cheese
1/2 cup jack cheese
1/2 cup parmigiana cheese
1 cloves garlic
1 shallots
1 green onion
2 dashes of hot sauce
1/2 teaspoon pepper
Olive oil for turkey breast
onion power
garlic powder
salt
pepper
rub turkey breast with olive oil sprinkle with salt, pepper, onion powder, garlic powder,
bake at 450 for 20 minutes reduce heat to 350 until the internal temp reaches 165
time depends on how large the breast is about an hour 165 is the magic number let rest for 10 minutes
heat oven to 450
cook bacon in oven on a sheet pan with a white rack to let fat drain should take 15 minute or longer for crispier bacon
in a large skillet
add butter and flour cook for 5 minute until the flour is cooked
add shallots
add garlic
soften vegetables
add milk let thicken
add cheddar cheese
add Parmigiana cheese
add jack cheese
add pepper
let cheese melt and become smooth
toast bread slices
assembly
toasted bread
turkey slice
two slices of bacon (ok I use 3)
cheese sauce
tomato (you can find a fried green tomato recipe on this blog if you want to get crazy)
now for football parties how about;
fried pickles
caramelized onions
slider buns
hoagie rolls
kentucky hot brown 3
