Red Velvet Cookies w Cream Cheese Frosting

Red velvet cookies with a green cream cheese frosting.  I always love a red velvet cake, but cookies are more portable.  I made the icing green to be more holiday-ish. This may be a hit at your cookie exchange.  I hope you like them.
Dry ingredients:
3 cups all purpose flour

4 tablespoons dark cocoa powder ( I like chocolate – it’s a lifestyle)

2 teaspoons baking soda (I wanted a softer cookie)
1 teaspoon cream of tartar ( this will make the cookie rise)
1/4 teaspoon of salt
Wet ingredients:
2 stick butter, softened
2 cups sugar
2 teaspoons vanilla
1/2 teaspoon red food color
2 eggs, slightly beaten
Pre-heat oven to 350
In bowl one, mix flour, salt, baking soda, cocoa powder, cream of tartar
In bowl two, cream butter and sugar
Add eggs
Add vanilla
Combine dry ingredients into wet ingredients
Add food color
 I use a cookie scoop, but you do you.
Place dough by the scoopful on parchment lined baking sheet
Bake for 8-10 minutes until the bottoms brown
Let cool
Top with cream cheese frosting:
1 stick butter
8 oz cream cheese
1 teaspoon vanilla
4 cups powdered sugar
1 pinch salt
A few drops of green food coloring
Mix butter and cream cheese with a mixer for three minutes
Add vanilla
Add salt
Add two cups of powdered sugar, slowly at first, then add the second two cups
Beat in green food coloring
Beat until smooth and light
Add red sprinkles for some extra cheer!
