It’s New Year’s morning (well 11:45). Why not start out a little healthier with apple walnut pancakes? Those who went to bed at 10:12 (like we do) will still enjoy these. Happy New Year.
Dry ingredients:
1 cup flour
1 teaspoon sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
Wet ingredients:
1 cup milk
1 egg
1 teaspoon vanilla
Flavor:
1 Granny Smith apple sliced thin and soaked in water or apple juice
1 /2 cup walnuts, chopped
Apple butter for topping
Mix all dry ingredients in a bowl
Add all wet ingredients except the apples and walnuts
Whisk until incorporated don’t over whisk
Add walnuts
Let rest for 20 minutes
Heat griddle
Spray with Pam
Lay the apples directly on the griddle in pancake pattern
Ladle batter over apples
When bubbles form on top of pancakes,
Flip
Cook until done
Serve with apple butter and butter this will make 4-5 pancakes
