Southwest Hash Brown Casserole

Having a small brunch?  Need a new idea?  Try this, it will wake up your taste buds.
6 potatoes, grated
1 yellow onion, sliced thin
16 oz salsa sauce
8 oz Chorizo sausage from Rainbow Acres Farm
6 oz white cheddar cheese
2 oz queso cheese
2 oz parmigiana cheese
2 oz butter, melted
2 oz olive oil
salt and pepper
1 teaspoon Oregano herb
6 eggs
Preheat oven to 350
Coat a 9 x 13 baking dish or oven-safe pan with oil and butter
Cover with grated potatoes
Bake for 20 minutes
Remove from oven
Add salt and pepper to taste
Top with salsa evenly
Top with cheese
Add onion slices
Add sausage broken in small pieces (You may want to cook it lightly first)
Sprinkle with oregano
Place eggs carefully on top don’t break the yolk
Bake for 10 minutes until egg is sunny side up
Serve
