Pork chops were on sale. Cheez-it’s were In sale. Parsnips were on sale. You get the pictures. This is how Cheese cracker pork chops came into my mind. Hope you like it.
2 1-inch thick pork chops
1 cup Cheez-its, crushed
3 eggs
1/4 cup milk
Salt and pepper
3 tablespoons olive oil
Heat oven to 350
In a pie tin, mix milk and eggs; whisk for 1 minute
In a second pan, crush the cheese crackers as fine as you can
Salt and pepper the pork chops
Dip pork chops in cheese crackers
Dip pork chops in egg wash
Dip pork chops in cheese crackers again
Heat an oven safe fry pan to medium on the stove
Add olive oil
Cook pork chops in olive oil for 5 minutes per side or until light brown
Place pan in oven and cook for 15 minutes. You want an internal temp of 150
Remove from oven and let rest for 10 minutes
Serve with butternut squash and baked parsnip (I know, I know: you may want apple sauce instead.)
