Ricotta Maple Pie

This is another Boston recipe; the original calls for a lot of sugar so I went with some local maple syrup.  Also, I added maple extract while the original had just vanilla.   It’s kinda like a Boston cheese cake.  Hope you like it.
1 store bought pie crust
2 cups whole milk ricotta cheese
1/2 cup maple syrup
3 whole eggs
2 egg whites
Pinch salt
1 teaspoon vanilla
1 teaspoon maple extract
1/2 teaspoon cinnamon
Heat oven to 350
Bake pie crust for 10 minutes  and let cool
In a large bowl
Whip ricotta for 3 minutes
Add eggs one at a time; mix for 30 seconds after each egg
Add egg whites and mix
Add maple syrup and mix for 2 minutes
Add salt and mix
Add vanilla and mix
Add cinnamon
Place batter in precooked pie crust
Place foil around outside of crust to prevent burning
Place a 13 x 9 pan half full of water on the lowest rack of oven
Shield crust with foil or use a crust protector
Place  pie on upper rack of oven
Bake for 80-90 minutes or until top is brown and a toothpick comes out clean.
