No dairy banana bread (is that vegan? I’m not sure)

I have 4 nieces.  One of the amazing ladies is a vegan.  I sometimes feel guilty about all the goodies I make  that I leave her out.  Well, here is a vegan recipe.  Normally I put bacon in everything but not in this case.  There has gluten but no sugar!  Now in all honesty, I miss the sugar and fat but not as much as I thought I would.  Hope you like it.
Wet ingredients:
4 ripe bananas (brown spots are good here)
1 1/2 cups coconut milk
1 teaspoon vanilla
1/2 cup canola oil
Dry ingredients:
3 cups flour
2 tablespoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
Flavor items:
1 cup walnuts (optional)
1/3 cup dried cherries
1/3 cup dried blueberries
1/3 cup dried apricots
In bowl 1, mix flour and baking powder
Add and mix in salt and cinnamon
In bowl two, mash bananas
Add milk and combine
Add vanilla (I use bourbon)
Add oil
Mix together
Add berries and apricots.
Add walnuts (optional)
Preheat oven to 350
Add flour mixture in 3 batches
Using canola oil, grease loaf pan
Add batter to loaf pan
Bake at 350 for 35-40 minutes
Serve with coconut whipped cream or a drizzle of honey
This will make 2 4 x 8 loaves
Oh and that’s not regular butter in the photo.  It’s plant butter.
