Sometimes fish and chips doesn’t mean French fries. Homemade potato chips can make a nice contrast to a baked cod dish. Or these can go with a football game. The great thing about making your own potato chips is that you can flavor them however you want. If you want Parmesan great! BBQ flavor knock yourself out. Oil and vinegar; that’s not going to work out for anyone. Experiment and enjoy.
4 russet potatoes
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon light brown sugar
1/4 teaspoon cumin
1 teaspoon onion powder
1/2 chipotle pepper powder
1 teaspoon pepper
1/2 teaspoon salt
Spice grinder
Cut potatoes thin 1/16 inch thick on a mandolin
Soak in water until ready to cook
Pat potato slices dry on paper towel
In a deep fryer heat oil to 375
Mix all spices and sugar in a bowl
When mixes place in a shaker bottle
Cook cut potatoes in oil for 4 per side or two nail golden brown.
Remove and place on paper towel to drain
Sprinkle with spice mixture
Repeat until all potatoes are fried
Serve
