Duck Bacon Pasta Carbonara

I have been working on this recipe in my mind for months.  We don’t eat that much pasta; I only make it once every 6-8 months. The second reason is the local mega mart doesn’t carry duck bacon (which is an 8 day process to make). A onetime neighbor of mine has requested a carbonara recipe twice, and I said I would get to it, but have been reluctant because I couldn’t think of something that wasn’t just doing someone else’s recipe of the classic.  So I said duck might be special.  I hope you enjoy it.
4 oz duck bacon (sold on line or recipe on this blog)
8 oz spaghetti
2 eggs, beaten
1/2 cup pasta water
1 tablespoon fresh parsley, chopped
1/2 cup Parmesan cheese
1 teaspoon freshly ground pepper
1/4 teaspoon salt
Mix beaten egg with Parmesan cheese
Fry duck bacon on medium heat
Remove bacon from pan
Save 3 tablespoons fat in the pan (add some olive oil if you don’t have 3 tablespoons of fat)
Cook pasta using package directions
Save 1/2 cup of pasta water
Add hot pasta to pan
Add pasta water
Add egg and cheese mixture, stir, stir, stir! (we don’t want scrambled eggs here) until a smooth and creamy sauce
Add duck and pepper to pan
Add parsley
Serve
