Duck Bacon (That’s something you don’t see everyday, but it sure tastes great)

This is not a quick recipe.  It will take you a week to do, but the results are stunning.  Salty, sweet, smoky.  I should have made more, but I ran out of duck.  I hope you like it.
2 skin-on duck breasts
8 tsp Kosher salt
Black pepper to taste
1/2 cup real maple syrup
Apple wood chips soaked in water
In an airtight plastic container, place duck breasts; cover both sides with 1/2 teaspoon of kosher salt
Coat with 2 tablespoons of maple syrup
Repeat process every day for 5 days
On the 6th day rinse and dry
Coat with pepper to taste
Smoke for 1 hour at 250
