I was playing pantry expiration safari and found a bunch of butterscotch morsels whose useful life was coming to the end. I’m thinking cookies since I had already done bloodies. So I asked what works well with butterscotch? I said some bourbon and some cinnamon would work well. I also thought that I wanted a lighter cookie, so I switched up the leavening agent, and a 1 hour later, cookies! Tasty cookies! I hope you like them.
Preheat oven to 375
Dry ingredients:
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon cream of tartar
Wet ingredients:
3/4 cup unsalted butter
2 teaspoons bourbon
1/2 cup sugar
1 large egg
1 cup brown sugar
1 cup butterscotch morsels
1/2 chopped walnuts
1/2 teaspoon salt
Melt butter in a small saucepan; let cool
In bowl 1:
Mix flour, baking soda, cream of tartar, salt, cinnamon
In bowl 2:
Mix sugar, brown sugar, and melted butter
Add egg
Add bourbon
Add dry ingredients into wet ingredients and combine well
Add morsels and mix
Line baking sheet with parchment
Using a teaspoon or cookie scoop, drop cookies on baking sheet
Bake for 8-9 minutes until golden brown
