Spinach and Cheese Gnudi

Pasta filling without the pasta.  I have been losing weight and wanted pasta, so this was my compromise: gnudi.  This is the filling from a ravioli or a cannelloni – Just no  pasta. Hope you like it.
1 cup ricotta cheese, drained for 2 hours
1/4 cup diced red pepper, blanched
4 tablespoons flour (you can use a non- gluten flour)
1 egg plus one egg yolk
1/4 cup Romano cheese
1/2 cup Parmesan cheese
1/2 cup cooked drained spinach
2 teaspoons chives
1/2 teaspoon black pepper
3 teaspoons olive oil for cooking
3 tablespoons butter for cooking
1/2 cup rice flour for coating
2 teaspoons fresh basil
Place ricotta cheese in cheese cloth and a strainer for 2 hours
In a bowl mix egg, ricotta and flour
Add chives and pepper
Add Parmesan and Romano cheeses and mix
In a large skillet on medium add butter
and olive oil
Coat spoonfuls of mixture in rice flour
Add spoonfuls of mixture to pan; brown on both sides
Serve with brown butter sauce or tomato sauce

    These look fabulous! What happens if you don’t drain the ricotta? Have you ever tried that? I assume they are too wet to form into their shapes?

        Did you have to press out any of the water or did it come out simply by gravity?

      2. Just let it drain in cheese cloth without any aid. There were about two to 3 tablespoons of water
