Dry ingredients:
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
Wet ingredients:
2 eggs
1 stick butter, softened
1 cup milk
1 teaspoon vanilla
1 cup dried cherries (using fresh is the pits) soaked in 1/8 cup brandy plus 2 tablespoons hot water
1/2 cup chopped almonds
1 cup semi-sweet chocolate chips
1 1/2 cups brown sugar
Preheat oven to 350
In bowl 1, mix flour, baking powder, salt, cinnamon, and baking soda
In bowl 2, mix butter and brown sugar until smooth
Add eggs and mix for 2 minutes
Add milk and mix
Add vanilla
Add dry ingredients to wet in three parts mixing until incorporated
Fold in cherries
Fold in chocolate chips
Fold in almonds
Place dough in the greased muffin tins
Bake for 22-26 minutes or until a toothpick comes out clean
