Cacio e pepe’ (Cheese and pepper)

Simple, qclassic Italian cooking with only 4 ingredients.  I did this one for the first time and loved the results.  Ok, I saw Bobby Flay do this on Beat Bobby Flay.  He won – yeah Bobby!
12 oz spaghetti
1/2 cup Romano cheese, grated
3 tablespoons freshly ground black pepper
2 tablespoons butter
1/4 cup pasta water
Romano cheese to top
Cook pasta per package instructions
Remove pasta
Drain water except 1/4 cup
Add butter, stir vigorously
Add pasta and stir
Add Romano cheese and stir for 3 minutes
Add black pepper and stir
Serve
