Blackened Bronzino

I was at my favorite fish store, and they had fresh-off-the-truck bronzino so I had to get it.  It’s a nice white fish but unlike farm-raised catfish, this one has some flavor.  It is quick and easy to cook,  so it’s perfect for a week night dinner.  Start to finish it’s 25 minutes.  I hope you like it.
1 1/2 pounds bronzino (I got mine at Crosby’s Crabs) Should be 4 filets
2 tablespoons of Ashman House Bayou Blackening season
1 lime cut in wedges
2 tablespoons vegetable oil
Heat cast iron pan to medium (it will start to smoke a little).
Coat fish with blackening season.
Add vegetable oil to the pan.
Add fish.
Cook each side for 4 minutes per side.
Serve with a squeeze of lime.
This goes great with watermelon and Crosby’s cole slaw.
