Chocolate sugar cookies with peppermint topping

Here is a simple cookie hack that is both quick and impressive. Chocolate and peppermint are natural friends and go together so well. I hope you like them.

1 package sugar cookie mix
3 tablespoons cocoa powder
1 stick butter melted
1 egg, beaten
1 bag Hershey Candy Cane kisses
1 candy cane crushed into small pieces

Flour for rolling

Heat oven to 375.

In a bowl, mix cookie mix and cocoa.

Add butter and egg and mix well.

Sprinkle flour on clean surface (or parchment paper).

Top dough with flour and roll out to 1/8 inch.

Cut cookies with a 2-inch circle cutter or shot glass.

Line baking sheet with parchment paper.

Place cookies on baking sheet and bake for 10 minutes.

Let cool for 25 minutes.

Unwrap kisses (but you knew that) and microwave in 30 second bursts until melted and stir.

Dip cookies in melted kisses; let dry on a cooling rack.
