Lamb Merguez Sausage Peppers with Mascarpone Cheese

This is the perfect appetizer for me at family gatherings. Why you ask? My wife hates lamb, my oldest daughter hates bell peppers, and my youngest is a vegetarian. That means I get it all. (Jack, I will share with you.) This is spicy, creamy, and a little crunchy from the pepper. I hope you like it as much a I do. Sharing is optional.

20 sweet bell peppers, halved and seeded
1/2 pound Merguez sausage, out of skin and crumbled
1 cup mascarpone cheese
1 cup Romano cheese, divided
1/2 cup Panko bread crumbs

Heat broiler to high.

In a small skillet brown sausage.

Place peppers on sheet pan.

Top with sausage.

Mix mascarpone with 1/2 cup of the Romano cheese.

Mix other 1/2 cup of Romano cheese with bread crumbs.

Top sausage with mascarpone and Romano mix.

Top mascarpone mix with bread crumb mix.

Broil for 5 minute until cheese is melted and the bread crumbs brown.
