Hasselback Sweet Potato

This is a fun winter side dish that I made complicated. You read my blog, you know. It’s sweet , savory, herbal, salty, and spicy. All your tastebuds will get involved. I hope you like it.

4 medium sweet potatoes
6 strips of bacon (I used duck bacon)
2 tablespoons maple syrup
1 teaspoon thyme
2 tablespoons butter, melted
1/2 teaspoon salt
1/2 teaspoon cayenne

Preheat oven to 425.

In a good nonstick skillet, cook bacon to 3/4 done (not crispy) then cut in small pieces.

Place a pencil on each side of the potato and cut 1/4 inch slices down to the pencil (so you don’t cut all the way through).

Place on a lined backing sheet.

Mix maple syrup, thyme, and cayenne in a bowl.

Drizzle melted butter over potatoes, then the drizzle maple syrup mixture.

Add salt and bacon.

Bake for 60-70 minutes.

    Thanks for sharing. Never done Hasselbacks potatoes on sweet potatoes. Have to try it out.
    Did you know that Hasselacks potatoes was created around 1953 in Restaurant Hasselbacken in Djurgården, Stockholm, Sweden? 😋
