If you live in Florida around Plant City, you have most likely gone to the Strawberry Festival. If you look at the place of origin, you will find that most of the strawberries this time of year come from Florida. So why don’t we use some in a parfait? The unique flavor of chocolate balsamic vinegar with the sweet ricotta makes this perfect for brunch. I hope you like it.
1 pound strawberries, quartered
2 tablespoons chocolate balsamic vinegar
12 ounces ricotta cheese
3 tablespoons honey
2 teaspoons fresh basil, chopped fine
Pine nuts (optional)
In a skillet, toast pine nuts until you smell a faint nutty smell.
Mix balsamic vinegar and strawberries.
Chop basil fine.
Mix ricotta, honey and basil.
In a serving glass, add a layer of strawberries and then nuts and then ricotta and repeat steps twice.
Top with additional basil.
