Bacon Jam

Want to take your burger to the next level? Bacon jam! Sweet and salty with a hit of spice.

1 pound bacon cut in on inch pieces
1/3 teaspoon black pepper
1 yellow onion diced small
1/3 cup balsamic vinegar
1/3 cup brown sugar
2 cloves garlic minced
1 teaspoon chili powder
1/2 diced jalapeño

Render bacon on medium until crisp.

Pour off fat, but keep 3 tablespoons of fat.

Add onions.

Cook until translucent, about 7 minutes, stirring often. They should get slightly brown.

Add garlic and cook for 1 minute.

Add brown sugar and balsamic vinegar.

Reduce heat to low and cook for 20 minutes, stirring occasionally.

Add chili powder and lime zest; stir.
