4 ears of corn
1 cup butter
1/2 teaspoon salt
1 teaspoon cayenne pepper
1 teaspoon paprika
1/2 teaspoon cumin
1 cup grated queso seco throzos
2 limes, juiced and zested
Zest lime and juice.
Melt butter.
Grill corn until brown and blistered on all sides; make sure corn is fully cooked.
Mix spices, melted butter, and lime zest.
Grate cheese (if not already grated).
Add lime juice to corn.
Coat corn in butter-spice mixture.
Dip corn in cheese.
Serve.
