Breakfast Poutine

Followers of this blog know my love for poutine. My friends at Happy Family Ranch (voted Fauquier County’s #1 food truck) asked if I could help them with a breakfast version for their food truck. So we put together this dish. It has pork belly, tater tots, cheese curds, and gravy. So eat your heart out Canada! Happy Family has something to show you. Go try this at One Loudoun farmers’ market on Saturday March 27th.

2 pounds pork belly cut in 1 inch cubes
1/4 cup teriyaki sauce
28 ounce bag tater tots
3 tablespoons bacon fat (saved from when you fry bacon or fry a few cubes of pork belly )

3 tablespoons flour
8 ounces whole milk
8 ounces chicken stock
16 ounces cheese curds
1/4 cup chopped chives

Cut pork into bite size pieces and mix with teriyaki and let rest for 20 minutes.

In a medium skillet, cook pork belly until lightly crisped; save 3 tablespoons of fat for gravy.

Remove pork belly and drain on paper towel.

Cook tater tots per package directions.

Add flour and cook for 4 minutes until flour is cooked.

Add milk and cook for 3 minutes, whisking occasionally.

Add chicken stock and whisk.

Salt and pepper to taste.

Assembly:
8 tater tots
Add cheese curds
Add pork belly
Add gravy
Add chives

Serve.
