Elvis was famous for his peanut butter, banana, and bacon sandwiches. (I hear he sang too.) I like cookies better than sandwiches, so here goes. We have all those flavors, but chocolate crashed the party too. So hail to the King, baby. I hope you like it. Thank you very much.
Dry ingredients:
2 1/4 cups flour
1 teaspoon baking powder
1 box banana pudding
1/4 teaspoon salt
Wet ingredients:
1 1/2 sticks butter
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar, packed
1 teaspoon vanilla
1 teaspoon chocolate liqueur or chocolate vodka
2 eggs
8 slices bacon, cooked and diced (Happy Family Ranch)
8 ounces mini chocolate chips
In bowl one, cream butter, peanut butter, brown sugar, and white sugar until smooth.
Smash banana until smooth.
Add eggs, vanilla, banana and chocolate vodka; mix for one minute.
In bowl 2, mix flour, baking powder, banana pudding, and salt.
Add dry ingredients to wet ingredients in four parts and mix until smooth.
Add chocolate chips and mix.
Add bacon and mix.
Preheat oven to 350.
Refrigerate dough for 20 minutes.
Using a cookie scooper about half full, place cookies on a parchment-lined baking sheet.
Press with a fork to about 1/2 inch thickness.
Bake 10-12 minutes.
Remove to a cooling tray.
Makes 4 dozen.
Wow, these cookies sound indeed fit for a king! I wasn’t sure about the chocolate chips, but Toll House chips are good with anything!
