I love chorizo, and Happy Family Ranch’s is my favorite chorizo. I also love a patty melt from my days in Chicago. This is a new version of the classic with more spice to cut through the fatty chorizo. I hope you like it.
2 6-ounce chorizo patties (Happy Family Ranch)
1 medium onion
2 slices Swiss cheese
2 slices Gouda cheese
2 tablespoons Thousand Island dressing
Salt and pepper
Oil for cooking
4 slices of rye bread
Add oil to skillet and slice onions into 1/8 inch strips and add to pan; cook until light brown.
Remove onions from pan.
Make patties slightly larger than the bread because they will shrink.
Add patties to pan and cook until 150 degrees internal temperature, flipping only once.
Add 1 slice of Gouda and one piece of Swiss on each patty.
Add onions to top of burger.
Toast bread.
Spread the Thousand Island dressing on bread.
Add burger patty to bread and top with other slice of bread.
Serve with chips.
