When I lived in the Midwest, one of the rites of Spring was Big Boy Strawberry Pie (right after my Slim Jim Combo). So I did my research and saw that every recipe was the same. Now, I can’t have that. So I made a couple of changes to intensify the strawberry flavor. You still have the fresh strawberries and the whipped cream. I hope you like it.
1 9” pie shell
4 cups strawberries, cut in quarters
1 cup sugar
2 tablespoons cornstarch
1 teaspoon lemon juice
1 1/2 cups water
1 teaspoon strawberry extract
3 ounces strawberry Jello
8 ounces whipping cream
Bake pie crust until golden brown.
Mix water, sugar, lemon juice, cornstarch, and strawberry extract and bring to a boil for 3 minutes.
Remove from heat and add jello; stir until dissolved.
Let cool for 1 hour.
Add berries to pie shell.
Cover in jello mixture.
Refrigerate for 2 hours.
In a bowl, whip cream until stiff peaks form.
Ask wife to pipe whipped cream on pie.
Watch as she does and compliment the result.
Serve.
