I love lamb and I love organ meat so I guess I could be part of a cult. That said , I grew up with wild game so organs were part of the meal. My friends at Happy Family Ranch happened to have some lamb heart so I gave it a try. I hope you like it.
1 lamb heat snout 1/2 pound(from Happy Family Ranch)
4 oz pasta sauce
4 oz red wine
1 sprig thyme
1 sprig rosemary
1 sage leaf
1 pinch salt
1/2 teaspoon pepper
1 pinch red pepper(now wash your hands we’ll wait)
Trim fat from outside of lamb as well as any visible veins .
Salt and pepper heart
Place in the casserole dish
Add wine, sauce, and the herbs
Place in oven at 325 for 2 hours
Remove herbs and serve with the onions on the pan
