I had not done state food in a while and did not want to expend too much energy, so that brings me to the state dish of Utah: Jello. Let that sink in – makes me wonder if the state TV show is Leave It to Beaver. Jello 1-2-3 at least brings us up to Happy Days. Also, this is not an adult concoction, so some of you won’t be fans. (DB)Most importantly, since the product was discontinued in 1996, people will think you had a cool new idea. I hope you like it.
2 Jello packs (any flavor will do)
Cool whip
2 cups boiling water
Defrost Cool Whip for 20 minutes.
Empty jello package in a bowl and add 2 cups of boiling water.
Pour 1 1/2 inches in clear serving bowls or glasses and refrigerate for 20 minutes.
Add 3 tablespoons of cool whip to the remaining Jello and mix.
Gently add about 1/2 inch to serving dish; refrigerate for 10 minutes.
Add 3 tablespoons of Cool Whip to remaining Jello and top the first two layers.
Refrigerate for 2 hours.
Top with a dollop of Cool Whip.
Serves 4.
