Greek Octopus Salad

Let’s go to a Greek Island with a gentle breeze on a sunny day to enjoy a nice fresh salad in a small cafe. The purveyor has returned from the market with today’s bounty and prepared it fresh for you. Octopus salad. I hope you like it.

1’pound octopus
3 plum tomatoes, diced
1 red onion, diced
1 cucumber, diced
1 teaspoon oregano
2 cloves garlic, minced
2,tablespoon olive oil
2 tablespoon lemon juice

1 tablespoon vinegar
Salt and pepper to taste

In salted boiling water, add octopus and cook until a paring knife easily penetrates the skin, about 45 minutes.

Let cool and cut into bite size pieces.

In a bowl mix oil, lemon, garlic, oregano, salt, and pepper.

In second bowl add onions, cucumber, tomatoes, and octopus.

Toss with oil and lemon dressing.

Let sit for 45 minutes

Serve.
