This is the state dish of New Jersey and was popularized in the movie Saturday Night Fever (kids ask your parents). There were diners that served these to people who were coming back from discos in New York City. (Again, ask your parents). I found it a little bland and heavy, so I added some zip. So do the hustle and try stayin’ alive with these fries. I hope you like it.
2 pounds cut fries
Gravy:
2 tablespoons butter
2 tablespoons flour
8 ounces beef broth
1 teaspoon sherry
1/2 teaspoon Worcestershire sauce
1/2 teaspoon black pepper
Cheese sauce:
1 tablespoon flour
1 tablespoon butter
3/4 cup milk
2 ounces Swiss cheese, grated
2 ounces white cheddar, grated
1/2 teaspoon Worcestershire sauce
1 teaspoon hot sauce
1/4 teaspoon dried mustard
Fries:
Cook to package directions (you want these fries crispy).
Cheese sauce:
Heat sauce pan to medium.
Melt butter and add flour and cook for 4 minutes .
Add dried mustard and stir for 1 minute.
Add milk and stir.
Add cheese and stir until melted.
Add Worcestershire and hot sauce.
Gravy:
In a sauce pan on medium, add butter and melt; add flour and cook for 4 minutes.
Add beef broth and stir.
Add sherry, Worcestershire, and pepper.

Gravy
