It’s football season, and I alway want something interesting while I watch a game. (I’m a Detroit Lions fan so after the 2nd quarter, you’ve got to have something to do.) Football food is food you eat with your hands caveman style. Wontons fit that bill. What – you don’t want Chinese food at your game party? Neither do I. If you have ever been to Saint Louis, you may have had fried ravioli; this is the same idea- it’s just harder to make those from scratch. So pull up a couch with a plateful of these and root for your home team.
20 wonton wrappers
1 small bunch basil
1 small egg plant, diced small
1 teaspoon Italian herbs
Salt and pepper
1/2 cup Italian cheese blend
Cooking spray
Water for sealing wontons
1 cup favorite marinara sauce
Parmesan cheese to top
Lay out your assembly line: wonton wrappers, diced eggplant, basil, cheese, bowl of water, baking sheet.
Preheat oven to 350.
Take a wonton wrapper; add 1/2 teaspoon of eggplant, pinch of chopped basil, and 1/2 teaspoon of cheese.
Lay wonton flat; wet all edges of wonton; fold over and seal tight. Pull together opposite corners and wet and press together.
Place on Parchment-lined baking sheet.
Spray top with cooking spray and sprinkle with Parmesan cheese.
Bake for 8 minutes.
Remove from oven; turn over and spray with cooking spray and top with Parmesan.
Bake for 7-8 minutes until golden brown.
Serve with your favorite warm marinara sauce.
Wontons and marinara sounds simply delicious!!!
