This is a weeknight dinner that is kinda a greek sloppy Joe (but not really). It has some elements like onions and tomatoes, but who uses lamb and potatoes in sloppy Joes? I know that it makes the house smell great and is a hearty dinner that is not your everyday meal. I hope you like it.
3 tablespoons olive oil
1 pound ground lamb
2 tablespoons rosemary, diced
1 pound potatoes diced into 1-inch pieces
1 teaspoon turmeric
1 teaspoon red pepper
1 14-ounce can chopped tomatoes
1 onion, chopped
4 cloves garlic, minced
1 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon basil
1 teaspoon paprika
In a skillet on medium add olive oil and lamb and brown.
Remove lamb and set aside.
Add onions to the pan and cook for 4 minutes.
Add garlic and cook for one minute.
Place cut potatoes in microwave and cook on high for 4 minutes.
Add lamb back to pan.
Add salt, pepper, red pepper, basil, rosemary, paprika, and turmeric.
Cook for 1 minute.
Add tomatoes and cook for 2 minutes.
Stir in potatoes.
Add to casserole pan and bake for 25-35 minutes at 350.
Serve with Parmesan.
