This is a little playful recipe. Thumbprints are a holiday favorite, but they also provide a canvas for so many possibilities. That is why I decided to do this recipe. Your mind thinks, ”Oh sweet!” Well, if you choose the blue one, yes, but red is another thing. We have the traditional cookie, but we have a twist, two fillings; Erin’s Elderberries provided the sweet, and Abundant Acres Farm provided the heat. I hope you like it.
Dry:
1 3/4 cup flour
3/4 teaspoon baking powder
1/2 teaspoon salt
Wet ingredients:
12 tablespoons butter, softened
3/4 cup sugar
1 teaspoon vanilla
1 egg
5 tablespoons Erin’s Elderberries Jam
5 tablespoons Abundant Acres Farm cranfuego jelly
Preheat oven to 350.
Mix flour, salt, and baking powder.
Cream butter and sugar for 4 minutes.
Add vanilla and egg and mix for 2 minutes.
Add dry ingredients in 3 parts and mix.
Form a ball about 1 1/2 inches and make an indentation with thumb.
Bake for 12-15 minutes or until golden brown.
Let cool in rack for 30 minutes.
Fill indentations with jellies and serve.
