Crab and Avocado Egg Roll

This one is another dish for watching sports. Sweet crab, creamy avocado, crunchy slaw all in an egg roll wrapper. It kinda has a California vibe. Like all good sports food, delicious and portable. I hope you like it.

8 ounces crab meat
8 ounces avocado chunks
3 tablespoons green onion
1 red pepper, diced
1 lime
8 ounces red cabbage
2 teaspoons hot sauce
6 egg roll wrappers
4 ounces remoulade sauce

(My picture from my first batch shows bean sprouts. I left them out of batch 2.)

Heat oil to 350.

Fill small bowl with water.

Lay out egg roll wrapper.

Cut out avocado meat into cubes.

To the wrapper add crab, cabbage, green onion, red pepper, hot sauce and avocado.

Roll egg roll from bottom point folding in sides.

Fry in hot oil for 5-7 minutes until golden brown.

Serve with remoulade sauce.
