I do a prime rib for Christmas almost every year. This year I did it on the pellet smoker. There are some great reasons to do it, it gives you the use of your oven for twice baked potatoes and any other sides you want to make. Simple ingredients, simple techniques delicious results. 8 pound standing rib roast
2 tablespoons salt
1 tablespoons black pepper
2 tablespoons garlic powder
2 teaspoons cayenne pepper
Oil to rub roast and promote browning.
1 high quality meat thermometer for remote use.
I used a pellet smoker so you will have to use what you have.
Your cook time is 20 minutes per pound at 275 or until your internal temp is 120 remove from smoker.
Wrap in foil for 30 minutes temp will go to 130 with cary over
Slice and serve.
