This is a St Louis creation. I believe that if you go to St. Louis, you have to eat ribs, gooey butter cake, and fried ravioli.. I had this in1996 after a business meeting in St. Louis. I had forgotten about them until my daughter visited a friend and raved about them. Now, I have easy and long form recipes here if you don’t want to make the ravioli from scratch. I hope you like.
1 12- ounce package of ravioli OR
2 cups OO flour
3 eggs
1 pinch salt
Filling:
8 ounces ricotta cheese
2 ounces Parmesan cheese, grated
1 egg
1 tablespoon Italian herbs
Serving:
16 ounces marinara sauce
4 ounces Parmesan cheese, grated
Mix flour, salt, and eggs in a bowl and mix well until combined.
Kneed dough for 5 minutes and place in the refrigerator for 30 minutes.
Roll out dough to 1/16 inch.
Mix ricotta, Italian herbs, 1 egg, and 2 ounces Parmeson cheese.
Place 1 tablespoon of filling in center of dough.
Fold over dough and seal all sides.
Let rest for 20 minutes.
Heat oil to 350.
Fry homemade or store-bought ravioli until golden brown.
Serve with marinara sauce and parmesan cheese.
