Chorizo Stuffed Poblano Peppers

I’m getting old, I hide my own Easter eggs.. So I saw this somewhere with regular ingredients, but I used Southwest ingredients. If I stole the original from you, sorry I can’t give you credit. So here is something totally original and different for dinner. Mildly spicy poblano, mildly spicy but super delicious Happy Family Ranch chorizo, creamy melty cheese, earthy Poppi’s chili powder all in one bite. I hope you like it.

4 poblano peppers cut in half
4 chorizo links (from Happy Family Ranch)
4 sticks cheddar mozzarella sticks
1 20-ounce marinara sauce
1 teaspoon Poppi’s chili powder
1 teaspoon garlic

Sour cream and cilantro

Heat over to 350.

Cut poblano in half and remove seeds and ribs.

Cut slit in sausage lengthwise and insert cheese.

Place peppers end-to-end and place sausage on top of both halves; it will take both halves to fit the chorizo.

In a bowl mix chili powder, garlic, and marinara.

In a 9 x 13 pan add stuffed peppers and top with marinara.

Bake for 50 to 55 minutes or until meat internal temp is 165.

Serve with sour cream and cilantro.
