Lemon Ricotta Waffle

This is weekend brunch kind of dish. Something that will wow the crowd. You have some tart lemon and the creamy ricotta topped with the freshness of strawberries. I hope you like it.

2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup sugar
2 tablespoons lemon zest
2 eggs
1 cup milk
1 cup ricotta cheese
1/4 cup lemon juice
1/4 cup melted butter
1 pound strawberries, husked

In bowl 1 mix flour, baking powder, and salt.

In bowl 2 mix eggs, sugar, milk, ricotta, lemon zest, and lemon juice.

Mix bowl 1 into bowl 2 until just combined.

Add butter and mix. Let rest for 20 minutes.

Heat waffle iron.

Cook waffles.

Top with strawberries. (none are pictured because they had gone bad.

Serve.
