The Funky Burger

I have discussed the five tastes we all can have when eating and drinking (sweet, salty, bitter, umami, and sour). I think I have touched on all of those with this slider and some spice to boot. The sweet comes from the pear, salty from, well, salting the burger, bitter from the arugula, umami from the blue cheese, and lastly sour from the pickled red onion. I used a Hawaiian role for some more sweetness. I know I said funky and nothing is more funky than blue cheese. I hope you like it.

1 pound ground sirloin
1 tablespoon black pepper
1/2 teaspoon red pepper flake
1/2 teaspoon salt
1/2 teaspoon garlic powder
6 Hawaiian slider rolls
8 ounces blue cheese
4 ounces arugula
1 Bartlett pear, sliced
1 red onion
1/4 cup white vinegar
1/4 cup water
2 ounces sugar
2 ounces A 1 sauce

Slice red onion in ribbons; add to a microwave- safe bowl. Add vinegar, water and sugar.

Microwave on high for one minute and set aside.

Make slider size patties 1/6 of pound.

Sprinkle patties with salt, pepper, garlic powder, and red pepper.

Heat griddle pan to medium and add patties.

Brown on both sides about 2 minutes if your pan is hot. Add a little water and cover to steam for 2 minutes and add blue cheese to melt about 4 minutes.

Assembly:
Bottom bun
Pear slices
Slider patty with cheese
Pickled onions
A 1 sauce
Arugula
Top bun

Serve.
