Air Fried Chicken Cordon Blue

Here is an update on the classic. I used low sodium ham and bleu cheese, but there is still a lot of flavor. Here is the real story (I buried the lead): this is all done in the air fryer. Now, I used Panko bread crumbs because they have a lot less sodium than regular bread crumbs. I hope you like it.

4 chicken thighs, boneless, skin on
4 slices ham
4 slices bleu cheese
1/2 cup flour
1/2 cup Panko bread crumbs
1/4 cup butter
1 teaspoon salt substitute
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon black pepper

Cooking spray

Roll 1 x 2 inch pieces of blue cheese in flour and set aside.

Melt butter and add salt substitute, garlic powder, onion powder, paprika, and pepper.

Coat both sides of chicken with butter mixture.

Wrap bleu cheese in ham slice.

Place one thigh on a cutting board or flat surface; add ham and blue cheese.

Top with second chicken thigh coated with butter mixture.

Add bread crumbs to top and spray with cooking spray.

Heat air fryer to 380 for 5 minutes.

Add chicken to basket and bake for 25 minutes at 380. Then check with meat thermometer.

When the internal temp hits 165, the chicken is done.

Serve.
