Asian Chicken Feet

Ruckers Farms presented me with a challenge. They handed me some chicken feet and asked if I knew how to cook them or if I could do a recipe. Challenge accepted. Chicken feet are widely used in Asian cooking. They are savory and packed with flavor; although there’s not a lot of food here, the collagen is great for joints and skin. The extra benefit is the ability to scare children on Halloween. I hope you like it (if you don’t get grossed out by it).

1 pound chicken feet (toenails removed, but don’t use your wife’s clippers)
2 tablespoons low sodium soy
2 tablespoons hoisin sauce
1 clove garlic, minced
12 ounces beer
2 tablespoons scallion, chopped fine
1 teaspoon hot sauce
1 teaspoon ginger
1 teaspoon black pepper
2 quarts cold water

Oil for cooking

Place cold water and beer in the pot and add chicken feet. You did remove the toenails, didn’t you?for 1 hour.

Mix soy, hoisin, ginger, black pepper, and hot sauce.

In a wok add oil and chicken feet. Toss to brown on all sides.

Add sauce and toss.

Serve with scallions.
