Pomegranate Apple Salad

The 70’s called and said I should do a jello salad. I told them not unless I get to update it. After many rounds of intense negotiations, we were able to come up with this compromise. Once the 70’s understood that I had no power to bring back leisure suits, big hair, and smoking at the dinner table, the 70’s agreed it would settle for my jello salad. Super healthy with pomegranate, apple, honey, and unflavored gelatin powder – not the stuff what is in the Jel… box. I hope you like it.

2 cups pomegranate juice
3 packages gelatin
1/2 cup grated honey crisp apple
2 tablespoons honey (Erin’s Elderberries local honey)
1 pinch salt

Mix 1/2 cup of pomegranate juice with three packs of gelatin and let sit for 20 minutes; then follow package directions.

Grate two apples; place on a paper towel to remove excess moisture.

Add 1/2 cup of gelatinize juice to 1 1/2 cup hot water; stir to dissolve completely.

Stir in honey and refrigerate for 20 minutes.

Mix in grated apple and refrigerate for 3 hours.

Serve with whipped cream.
