Western Deviled Eggs

Since I’ve been doing a few brunches, I have to keep coming up with new ideas. This is a combination of a western omelette and deviled eggs. So the creamy egg yolks with the peppers, onions, cheese, and ham. I hope you like it.

10 eggs, hard boiled
2 slices ham, diced fine
2 tablespoons green pepper, diced fine
1 tablespoon red onion, diced fine
1 teaspoon garlic powder
1/4 cup mayonnaise plus 2 tablespoons (if needed)
1 teaspoon Dijon mustard
1/2 teaspoon pepper
1 teaspoon Old Bay seasoning
1/2 teaspoons paprika

Remove yolks from eggs and add to a 2 quart bowl.

Place whites on plate.

Using a fork smash yolks into a paste, add mayo, garlic powder, pepper, and Dijon mustard and mix until smooth.

Mix in green pepper, onion and ham.

Fill eggs with yolk mixture and sprinkle on paprika.

Serve.
