Pizza Benedict

How many of us have had left over pizza for breakfast? Some of us have even made a breakfast pizza with eggs, bacon, and sausage. Well, I have tried to elevate that leftover into a brunch dish. English muffin, pizza sauce, pepperoni, mozzarella cheese, runny poached egg, hollandaise sauce topped with Italian herbs and Parmesan cheese. All piping hot and not out of the pizza box and microwave. I hope you like it.

4 English muffins
24 slices pepperoni
1 cup pizza sauce
4 slices mozzarella cheese
2 teaspoons Italian herbs
1 package hollandaise sauce
1 cup water
1/2 stick butter
4 poached eggs
3 tablespoons Parmesan cheese

Preheat oven to 350.

Toast English muffins.

In a skillet, add pepperoni and cook for 3 minutes, keeping them moving in the pan.

Add the pizza sauce and cook for 5 minutes.

Place in oven for 10-12 minutes.

Add poached egg.

Add hollandaise.

Top with Parmesan cheese.
