Espresso Scones

Coffee and scones are a pair made in heaven. So why not put coffee in the scone, not just coffee but espresso? There is also a sweet element and a hearty scone. A great way to kick off the weekend. I hope you like it.

1 1/2 cups flour
3/4 teaspoon baking powder
1/2 teaspoon salt
1/4 cup sugar
1 tablespoon espresso grounds
1 cup hot water
1 cup heavy cream
1 teaspoon vanilla
1/2 cup chocolate chips
4 tablespoons butter
1 teaspoon saved used espresso grounds

Heat oven to 375.

Brew 1 cup espresso with hot water and 1 tablespoon espresso grounds. Save 1 teaspoon of the grounds.

In a large bowl add flour, baking powder, salt, and sugar.

In a second bowl add espresso grounds, cream, and vanilla. Add to flour bowl and mix. It should be a little sticky.

Add chocolate chips and mix.

Place parchment on counter; sprinkle with flour. Place dough on the parchment and kneed 6 times.

Shape dough into a circle 1 inch thick.

Cut like a pizza in 8 scones.

Brush with butter.

Bake for 22-27 minutes
