I was lacking tequila, so I made daiquiri cookies. Lime and strawberries with some rum – all the things that make a daiquiri. I hope you like it.
1 stick butter
3/4 cup sugar
1 teaspoon rum
1 teaspoon strawberry extract
1 egg
1 teaspoon lime juice
1 teaspoon lime zest
1 1/2 cup flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup of diced strawberries
1/2 cup of powdered sugar
2 tablespoons of lime juice
1/4 cup red colored sugar
Preheat oven to 350.
In bowl 1 cream butter with sugar for 3 minutes.
Add egg and beat for 2 minutes.
Add rum, strawberry extract, lime juice, and lime zest and beat for 1 minute.
In bowl 2 add flour, baking powder, salt and baking soda.
Add bowl 2 to bowl 1 in three installments.
Fold in strawberries.
Scoop cookies on a parchment-lined baking sheet.
Bake for 9-10 minutes.
Let cool for 30 minutes.
Mix lime juice and powdered sugar.
Dip edges of cookies in icing.
Dip edges in red sugar.
Let dry for 45 minutes.
