Gnocchi with Salmon and Spinach

This is a quick weeknight dinner with lots of pre-made stuff. Salmon, spinach, mushrooms, onions all in a creamy sauce. Rich, flavorful with a few surprises. I hope you like it.

1 onion, diced
8 ounces baby portobello mushrooms
1 bag spinach
4 tablespoons olive oil
10 ounces salmon cut in 1-inch pieces
1 teaspoon black pepper
1 teaspoon garlic
1 16-ounce jar Alfredo sauce
2 teaspoons fresh dill, chopped fine

In a skillet on medium heat add onions and 2 tablespoons of oil and cook for 3 minutes.

Add mushrooms and cook for 5 minutes.

Bring one quart of water to a boil in a 2-quart sauce pan; add gnocchi and cook until gnocchi float. Remove to a paper towel.

Add last of oil and salmon to skillet.

Cook for 4 minutes on each side.

Add black pepper and garlic.

Add Alfredo sauce and cook for 7-9 minutes.

Add gnocchi.

Add dill and stir cook.

Serve.
